Superfoods and Skin Care **

Sunday, 4 September 2016

Hello everyone!

When I was in my teens I was extremely lucky to have clear skin, which was great for my confidence and everything, but meant that I was a bit blasé about skin care. I tended to just eat whatever I wanted and didn't think about hydration or superfoods at all! Since adulthood and reading all about people's skin care routines I have had a complete change of heart. Skin care is so important, but more important is healthy eating and staying hydrated, it helps you obtain clear and glowing skin. After speaking with Nuts.com, a highly reputable online health food store, I was inspired to take part in a discussion of how healthy eating can improve your skin. Naturally, I was super keen to get involved with all beauty related discussions :-)

Today I want to talk a bit about the benefits of Goji Berries, Cacao Nibs, Herbal Teas and Chia Seeds. I will also be including a couple of tips on how I like to incorporate these into healthy snacks. Eating healthily is something that I rely on for energy during tricky times like exam revision and stressful work periods. A delicious, yet healthy snack can instantly boost your mood, giving you essential nutrients and making you feel virtuous for actually eating something good for you instead of snacking on chocolate. So delicious and tempting, but so regrettable afterwards!

Goji berries are packed full of Vitamins A, B2 and C, as well as Zinc. Their antioxidant properties are believed to boost your immune system, helping to clear and improve your skin. You can eat these raw, dried or incorporate them in baking recipes. I like to add them to salads with walnuts, rocket, grapes, red pepper and chia seeds. I quite like their sweet flavouring when raw and will quite happily eat them on their own.

Cacao nibs are one of the purer forms of chocolate, they are raw, crushed and dehydrated cocoa beans without the additional milk and sugar used to transform them into chocolate as we know and love it. Cacao nibs are full of antioxidants and the lack of sugar makes them a much more skin friendly snack. They are also found to be really effective at combatting PMS, so ladies when the monthly demon rears its head you should consider these as a little snack! Cacao nibs can be a little bitter if you are used to milk chocolate and I will admit I don't enjoy eating them on their own, although they do have quite a good minty tang! I prefer to add them to a cake or brownie mix. My favourite way to eat them is adding them to greek yoghurt with honey and dried goji berries. This makes a delicious and nutritious snack, with the honey adding that bit of sweetness. I also like to bake sugar free brownies using cinnamon, dark chocolate, cacao nibs and goji berries. These make quite a good revision snack as you can make them into quite small chunks, ideal for nibbling at my desk!

Chia seeds are super versatile, they can be added to both sweet and savoury recipes. I enjoy adding these to rocket, red lettuce and tomato salads. However, my favourite way to eat them is to sprinkle them on top avocado and poached egg on toast. They are so easy to just chuck into a recipe, and they taste really rich and nutty. Please do bear in mind that it isn't recommended to have more than 15g per day, moderation is key! Chia seeds are great for clear skin, they are rich in antioxidants, omega 3 fatty acids, fibre and a whole bunch of vitamins!

Everybody is all about the matcha green tea at the moment, unfortunately I am not a caffeine drinker! However, its skin benefits are indisputable. Matcha tea is an ancient Chinese recipe, the antioxidants coupled with the purity of the tea and hot water is great for opening up your pores and clearing your skin. My non-caffeine alternatives are herbal tea, especially ginger and lemon, they make my skin feel invigorated and fresh. Both varieties of tea help keep you hydrated, which is essential in achieving that gorgeous glowing skin :-)

How do you like to enjoy healthy snacks? If you have any recipe tips please let me know in the comments below :-)

New Forest Show 2016

Friday, 29 July 2016

Hello everyone!

I hope you are all looking forward to another sunny summer weekend. Although my holiday technically finished on Wednesday, we still had the New Forest Show on Thursday to be excited about. Every year people flock from all over to come to the New Forest Show. It's a 3 day livestock and agricultural show in the last week of July :-) It's always loads of fun, with hundreds of stands selling local produce, clothes, food and of course the livestock exhibitions. This was my third year going and we always have a great time there.

These are some of the bits we got to nibble! Read on for more details...

A lot of people think it's all about the animals and farming, but it's actually just a really fun day out. Of course, with Mr.Gingersnap being an agricultural contractor we go for business as well as pleasure...but let's be honest I'm there for the food. I love the ambience there and seeing all our friends from Young Farmers Club.

We spend a lot of time looking at machinery, Mr.Gingersnap loves it :-)

This year we decided to go on the last day so we could make the most of the good deals and final day celebrations. We bought so much food! Sadly I was a bad blogger and didn't wait to take photos before we ate our treats. We had some delicious bourbon and chocolate orange cupcakes followed by some gorgeous macarons! They were from La Patisserie Macaron by Steven Lopez, we had some quite interesting flavours too: lemon and poppyseed, mint chocolate, raspberry and white chocolate and strawberries and cream. They were super yummy! What I can show you are the cheeses we bought from Black's. They did us a deal of three wheels for £10, which is great for how good they are. Last year we had some truly great flavours from them so we had to try their new ones. Little Winker, ale and mustard and Irish whisky and stem ginger tempted us the most along with a traditional mature cheddar.

When we weren't buying food, we were sampling it. We had fudge, cheese, jam, olive oil and balsamic vinegar and various meats. We ended up coming home with some port and cherry jam, roasted tomato and cumin salsa, two more cheeses and some fudge. Yep, we are super greedy, but we need things for work packed lunches! Well, that's my justification anyway.

Sadly, it started raining so we headed into the tents!

Other than the food, there are a great many crafts and art stalls, with amazing work. Mr.Gingersnap ended up getting a stool for our nephew with a really cute monkey hand-carved onto it and one with a zebra as a cheeky treat for me. Zebras are my favourite animal, so now I can keep my reading list books close at hand on a fabulous stool. The stools are from Made By Lo, who creates beautiful tailor made gifts.

The show also has a number of horse events for all you equine fans out there :-)

When it comes to the animals, I promise you it is very safe and welfare friendly. There are vets on hand constantly in case they are necessary and to ensure all welfare requirements are met. It's a great way to discover new breeds and learn more about these very important creatures. Mr.Gingersnap's dad actually shows their sheep and stewards on the last day, which is why we have exhibitor tickets!

All in all, whether you are into farming and agriculture or not it is a great summer day out with friends or family. I'd recommend anybody checking out local shows, they really are loads of fun!

Have any of you been to shows or fairs? Let me know what you thought in the comments below :-)

Sophie's Coffee Shop

Saturday, 9 July 2016

Hello everyone!

Today is a very rainy, grey day where I am. The kind of day that makes you want to curl up under a blanket with a hot chocolate and a good book. As I write this I am drinking an after eight hot chocolate and it has made me think of last weekend. It was so sunny then! My family decided to make the most of the sunshine and head into our local town Lymington for breakfast.

Now, finding a good breakfast place is very important. Personally I like tiny boutique places with a cosy vibe and fabulous food. Lymington is full of places that fit the description, but Sophie's Coffee Shop really stood out for me. Situated on one of the cobbled streets leading down to the quay, it overlooks some lovely little shops and houses. Perfect for people watching if you're a nosy parker like me!

See it even has a window seat!

Once you get inside it feels almost like someones living room, with flowery wall paper, shabby chic wood furnishings and cosy armchairs! It even has a garden to sit out in the sun.

Love all the book covers on the walls!

A real bonus for me is their selection of teas, they stock a huge range of Tea Pig teas, many of them not caffeinated which is ideal for me. I went for a mint choc chip tea and it was nicely refreshing with a little after kick of dark chocolate! So yummy! According to Mr.Gingersnap they also make a mean flat white coffee :-)

I know you're all wondering about the food...I'm getting to that. Mr.Gingersnap had a slice of lemon drizzle cake which was gone in about 8 seconds flat. He is a bit of a cake fiend! I had a scone with butter and jam. I can be a little strange in that I like my scones warmed up, so when this one came to the table pre-warmed I was in heaven. It was light and fluffy and tasted so fresh!

If you are in the New Forest area this summer and want somewhere with lovely food and service then please do check them out :-) Have you been anywhere delicious for brunch recently? Let me know in the comments below!

Parisian Paradise

Sunday, 13 March 2016

Hello everyone!

First off, I'm so so sorry if I have been a little, okay very, inactive recently! I have had exams, among other far more exciting things. I have been keeping this very quiet until it was all organised, but yesterday I moved to Paris for 3 months.

I love this picture so much <3

Yes that is quite out of the blue, but it's such a great opportunity! I'm here for 3 months working in the vet school for some of my final year rotations :-) I have been a busy bee settling into my room and making it all lovely with fresh lavender and some gorgeous moroccan style cushions. I always think it is important to enjoy your surroundings and feel at home.

I bought some cards to make my room more jolly!

The last few days I have been exploring the city with my parents, we have probably walked more miles than I normally do over multiple weeks! Earlier today, I stumbled upon a boutique full of macarons called La Duree. You all know how much I love them, of course I had to go inside and suppress the urge to go mad and buy everything.

The little pink tub is full of Violet flavoured Guillemauves (marshmallows), they are a gift for my new housemate :-)

The flavours from left to right and top to bottom are: Praline, Marie-Antoinette Tea, Chocolate, Lemon, Cherry Blossom, Passion Fruit Chocolate, Citron and Salted Caramel

How yummy do these look?! I have decided I absolutely must keep visiting this shop until I have tried all of the flavours...last year when I travelled Europe with Mr.Gingersnap we ate the signature pastry of each town we saw. Thinking along those lines I have decided to try a different flavour of macaron every single day. I love the box design for this, the artwork is by a Japanese Designer called Yuko Higuchi. She stages cats, rabbits and a young girl in all of her creations and is famous for her designs full of tenderness and joy. I adore her work and I am so excited to keep this box for jewellery or maybe little notes!

Very soon I will be back properly with reviews, recipes, tips and tricks for y'all :-) Has anyone been to Paris? Let me know if you love this city in the comments below!

Manly Mondays - Breakfast of Champions

Monday, 22 February 2016

Hello everyone,

Don't you just think the week would start off so much better with a big breakfast? I am all about breakfast and finding new ways to make it interesting, I feel that if you have something yummy and exciting to look forward to you're more likely to want to get up. Keeping that in mind here is a favourite recipe of Mr.Gingersnap's. I usually make this for him on Sunday, though he likes to "help" by eating my ingredients as we go along!

I first saw the idea for Bacon Egg Cups over at A Little Freckle and thought they looked too good not to try! They can be made as a big breakfast, a brunch or as a starter depending on how many you want to make. I wrote this recipe as if you are making 6, so 3 each, but in the photos I only made 3, sorry guys.

You will need:
  • 6 medium-large eggs
  • butter
  • 3-4 slices of brown bread
  • cheddar cheese
  • pepper
  • paprika
  • 8 rashers of bacon
Firstly you want to grill your bacon until it is almost done, this usually takes around 2 minutes for each side under the full heat of the grill. The bacon should still be a little soft and pink. While you are doing this pre-heat your oven to 200°C/400°F/Gas mark.

Next, prep your muffin tins with a bit of butter for greasing. Just get on in there and smear a thin layer around the bottom and sides of the muffin part of the tin.

Use a glass to cut circles out of your bread, I find that one slice of bread makes two circles if you go to opposite edges of the slice. Save the left-over bits for the birds, they get hungry over the winter! Place the bread circles in the tins, one in each hole.

Slice your bacon into strips and wrap it around the edge of the muffin tin, if you have gaps then use some bits from the extra bacon slices to patch it up. If you don't need these bits then just eat them...yum!

Grate your cheese so you can make a layer of similar thickness to the bread inside your bacon cup. Almost done! Crack one egg into each bacon cup, sprinkle on some black pepper and a teeny bit of paprika and voila, ready for the oven.

I find that to have a runny yolk it is best to cook them for 11 minutes. If you like a more solid yolk, try 12 or 13 minutes. When they are done it is super easy to scoop them out onto a plate and enjoy!

This recipe is really quick and easy, you can serve them on their own as a breakfast, with beans and tomato as a bigger brunch or serve on a bed of rocket salad singly for a tasty and decadent looking starter.

How do you enjoy your breakfast? Let me know in the comments below :-)
